Coffee Substitutions

Nancy writes, "What can I use in place of coffee in a baking recipe? I am not a coffee drinker and prefer not to use it at all."

Answer: That's easy. Omit the coffee. The recipe that you are using is probably using coffee to flavor the cake, pie or cookie. Coffee is not an integral part of baking like flour and sugar. If the recipe calls for 1/3 cup brewed coffee, you can replace it with water. Or, if your recipe requires 1/3 cup brewed coffee and 1/3 cup buttermilk, you can substitute with 2/3 cup buttermilk.
